A special cooling drink made with flavourful masalas, mainly fennel seeds / saunf is an absolute refreshing drink. Simply add this specially made powder to a glass, some ice cubes and water, that’s all it takes to make your guests happy!

SAUNF KA SHERBAT

Ingredients

½ cup fennel seeds (saunf)
2 green cardamoms
2 cloves
6- 8 black peppercorns
½ inch cinnamon stick
1 tbsp poppy seeds (khas khas)
1 tbsp cumin seeds
10-15 fresh mint leaves
2 tbsps sugar
½ tsp black salt
½ tsp salt
Ice cubes as required

Method

1. Dry roast fennel seeds, green cardamoms, cloves, black peppercorns, cinnamon stick, poppy seeds and mint leaves in a non-stick pan till fragrant. Transfer in a bowl and allow to cool.
2. Dry roast the mint leaves in the same pan on low heat for 1-2 minutes. Transfer into the same bowl and allow to cool.
3. Add sugar, black salt and salt and mix till well combined. Put this mixture into a blender jar and blend to a fine powder.
4. To serve, add 1-2 tbsps of the blended powder in serving glasses. Add ice cubes and pour sufficient water. Mix and serve immediately.
