MATRA CHAAT

Ingredients

250 grams dried white peas, soaked for 6-8 hours
Salt to taste
A pinch of turmeric powder
A pinch of soda bi carbonate
1 medium onion, chopped
2 green chillies, chopped + to sprinkle
2-3 tbsps chopped fresh coriander leaves + to sprinkle
2-3 tbsps date and tamarind chutney
2-3 tbsps green chutney
1 tsp roasted cumin powder
1 tsp chaat masala
Black salt to taste
Salt to taste
A pinch of yellow chilli powder
1 tbsp lemon juice
Fried masala chillies for garnish
Butter as required
4 kulchas for serving

Method

1. Take a pressure cooker. Drain the white peas and add to the cooker. Add 2 cups water, salt, turmeric powder and soda bi carbonate and mix well. Cover and cook on medium heat till 4 whistles are released.
2. Open the lid once the pressure settles completely.
3. Transfer in a bowl. Add onion, green chillies, coriander, date and tamarind chutney, green chutney, roasted cumin powder, chaat masala, black salt, salt and yellow chilli powder and lemon juice and mix well.
4. Heat butter on a nonstick tawa. Place kulchas and toast till crisp.
5. Transfer matra chaat in serving bowls, sprinkle some green chillies and coriander on top. Garnish with fried masala chillies and serve with toasted kulchas.
