Ingredients for Shahi Malai Paneer:

(Tsp-Teaspoon; Tbsp-Tablespoon)

Paneer -250 gms cubed

Cashew-Chilli Paste:
– Cashew nuts – 8
– Garlic cloves- 4
– Red Chillies- 4

Tempering:
– Cumin seeds-1/2 tsp
– Black cardamom-2
– Bay leaf-1

Spice Powders:
– Turmeric powder-1/2 tsp
– Kashmiri Chilli Powder- 1.5 tsp
– Coriander powder- 1 tsp
– Garam Masala Powder-1/2 tsp
– Kasuri Methi- 1 tsp

While frying cubed Paneer:
– Turmeric powder-pinch
– Kashmiri Chilli Powder-pinch
– Kasuri methi (dry roasted & crushed)- pinch

Other Ingredients:
– Whisked curd-3-4 tbsp
– Milk- 1/4 cup
– Fresh cream- 3-4 tbsp
– Salt- 3/4 tsp
– Coriander leaves, chopped -3 tbsp
– Fried cashew nuts- 10-12
– Oil- 3 tbsp
– Kasuri Methi( dry roasted & crushed)-1 tsp

Preparation:

– Peel 4 cloves of garlic and cut the dried chillies into 2 pieces.
– Add all the items of the paste into a grinder and coarse grind it first.
– Now add 4-5 tbsp water and blend into a smooth paste. Remove to a small bowl and set aside.
– Cut the paneer into 1” cubes. Set aside.
– To fry the paneer pieces, heat 1 tbsp oil in a pan and place the paneer pieces side by side.
– Sprinkle a pinch each of turmeric powder, Kashmiri chilli powder & crushed kasuri methi and then flip on the other side.
– Keep turning and frying all sides to get an even colour.
– Remove from pan and keep on a plate.

Process:

– In the same pan, add another 1-2 tbsp oil & heat it.
– Add the whole spices and give a stir.
– Now add the ginger garlic paste and the paste made earlier.
– Fry on low heat for around 4-5 mins till it is cooked and oil separates.
– Now add all the spice powders, 3/4 tsp salt ,the unroasted kasuri methi and 1/2 cup water.
– Mix and fry on low heat for 3-4 mins till oil separates.
– Switch off heat and add the whisked curd. Give a mix and then switch on heat on low.
– Cook on low heat for 3-4 mins till oil separates.
– Add the fried paneer and mix it well. Cook for around 2 mins on low heat.
– Now add the milk and fresh cream and simmer for 3-4 mins till the colour changes from whitish to golden and oil separates.
– Now add the fried cashew nuts, pinch of roasted & crushed kasuri methi and chopped coriander leaves.
– Mix and simmer for a minute.
