Ingredients
For the egg mixture
3 eggs
1 tbsp chopped onions
1 tsp chopped green chillies
1 tsp chopped coriander leaves
1 tbsp chopped tomatoes
Salt to taste
For the Maggi
2 tbsp oil
¼ cup chopped onions
2 chopped green chillies
1 tbsp chopped yellow peppers
¼ cup corn kernels
¼ cup chopped tomatoes
1 ½ cup water
2 pkts Maggi noodles
2 pkts noodle seasoning
Other ingredients
Chopped coriander leaves
½ cup grated cheese

Method
1. Take all the ingredients for the Omelette in a bowl & whisk till combined, keep the mixture aside as you prepare the maggi.
2. Now heat oil in a pan & saute the onions & chillies for a minute. The add the peppers, corn, & tomatoes and cook till the tomatoes have wilted, next add water, Maggi & Maggie seasoning, bring to a boil & cook till dry.
3. Now remove have the Maggi from the pan & spread the remaining half evenly on the pan, pour the egg mixture & sprinkle with coriander & cheese, now add the other half of the Maggi & pour the remaining egg mixture & top again with coriander leaves & cheese.
4. Cover & cook at medium heat for 5 minutes
to serve to flip the Omelette on to a plate, cut into slices & drizzle with ketchup or sauce of your choice.
