Ingredients :
For Dosa:-
1 cup Black Chick Pea (Kala Chana – soaked overnight)
1/4 cup Rice (soaked for 1 hour / alternatively suji or oats can be used)
3/4 cup Water
Oil (to make dosa)
Sambar Masala (alternatively podi masala or garlic chutney can be used)
Grated Paneer
Finely chopped Onion & Coriander
For Chutney:-
2 tsp Oil
1 tsp Cumin Seeds (Jeera)
1 tbs Skinless Lentils (Urad Dal)
1 tbs Bengal Gram Split (Chana Dal)
Pinch of Asafoetida Powder (Hing)
1 small chopped Onion (optional)
2-3 Dry Red Chillies
4 medium chopped Tomatoes
Salt as per taste
Water (as required)
2 tsp Tamarind Pulp (Imli Pulp)
1/4 cup freshly chopped Coconut (optional)
1 small piece of Jaggery
For Tadka:-
1-2 tsp Oil
1 tsp Skinless Lentils (Urad Dal)
1 tsp Mustard Seeds (Rai)
Few Curry Leaves

Method :
Take soaked 1 cup Chana in a mixer jar
Add soaked 1/4 cup Rice
Add approx 3/4 cup Water
Churn to a thick batter
Transfer this batter in a mixing bowl
Add Salt as per taste and keep aside
Heat 2 tsp Oil in a pan to make Tomato Chutney
Add 1 tsp Jeera
Add 1 tbs Urad Dal
Add 1 tbs Chana Dal
Roast until golden-brown
Add a pinch of Hing
Add 1 small chopped Onion
Add 2-3 Dry Red Chillies
Add 4 medium chopped Tomatoes
Add Salt as per taste
Add a little Water
Add 2 tsp Tamarind Pulp
Add 1/4 cup freshly chopped Coconut
Add 1 small piece of Jaggery
Cover the lid and cook for 5 min
Turn off the heat & let it cool down
Churn the mixture to make chutney
Heat 1-2 tsp Oil in a pan for tadka
Add 1 tsp Urad Dal
Add 1 tsp Rai
Let it crackle and add few Curry Leaves
Pour this tadka on chutney prepared
Further heat the pan to make dosa
Add a drop of Oil and wipe out with a tissue
Add a ladleful of batter and spread it around
Drizzle some Oil and cook it on high heat
Sprinkle some Sambar Masala
Add grated Paneer
Add finely chopped Onion & Coriander
Fold the dosa in the middle and take it on a wire rack
