Fresh Fruit Cream

Ingredients

For rabdi:
Milk 2 cups

Fruits:
Apple 2 pcs
Papaya 1 small pc
Grapes ½ cup
Pomegranate seeds ¼ cup
Banana 2 pcs
Mango 2 pcs
Strawberry 9-10 pcs

For cream:
Fresh cream 1 cup
Hung curd 1 tbsp
Powdered sugar 1 tbsp
Milkmaid 2 tbsp
Rabdi 4 tbsp
Green cardamom powder ½ tsp
Strawberry syrup

Pista chopped for garnish
Silver vark for garnish

Method:

Rabdi Preparation:
Rabdi serves as a rich and creamy base for our fruit cream, adding depth and richness to the dessert.

1. Heat and Boil Milk: Begin by heating a pan over medium heat. Pour milk into the pan and allow it to come to a boil.
2. Simmer and Stir: Once the milk reaches a boiling stage, reduce the flame to medium-low. Continuously stir the milk to prevent it from sticking to the bottom of the pan.
3. Thicken the Milk: Let the milk simmer gently until it thickens to a desired consistency. This process may take some time, so patience is key. Keep stirring to ensure even thickening and to prevent burning.
4. Cool and Chill: Once the rabdi reaches the desired thickness, remove it from the heat and let it cool down. Transfer it to a bowl and refrigerate until chilled.

Cutting of Fruits:
The vibrant assortment of fruits adds freshness and flavour to our fruit cream.

1. Wash and Prepare: Begin by thoroughly washing and cleaning all the fruits. This ensures they are free from any dirt or impurities.
2. Cut into Bite-sized Pieces: Peel the apple, papaya, banana, and mango, then cut them into small, bite-sized pieces. Transfer these pieces into a large mixing bowl.
3. Prepare Grapes and Strawberries: Cut grapes and strawberries into halves or quarters, depending on their size. Add them to the bowl of mixed fruits.
4. Add Pomegranate Seeds: Incorporate pomegranate seeds into the fruit mixture, gently mixing them in.
5. Refrigerate: Place the bowl of mixed fruits into the refrigerator to keep them fresh until ready to assemble.

Cream Preparation:
The creamy layer brings everything together, adding indulgence to our dessert.

1. Whip Fresh Cream: In a separate bowl, whip chilled fresh cream until it forms stiff peaks.
2. Incorporate Hung Curd: Add hung curd to the whipped cream and continue whipping until well combined.
3. Sweeten and Flavor: Gradually add powdered sugar and milkmaid (condensed milk) while continuing to whip. Finally, fold in the chilled rabdi and green cardamom powder until everything is evenly mixed.

Assembling Fresh Fruit Cream:
Bringing together the prepared elements to create a visually appealing and delicious dessert.

1. Layering in a Glass: Take a serving glass and start by adding a layer of strawberry syrup at the bottom.
2. Add Fruits: Spoon a generous amount of the mixed fruits over the syrup, ensuring an even distribution.
3. Top with Syrup and Cream: Drizzle another layer of strawberry syrup over the fruits, then add a dollop of the prepared cream on top.
4. Repeat Layers: Repeat the layering process by adding more fruits followed by syrup and cream until the glass is filled to your liking.
5. Garnish and Serve: Finish off by garnishing the top with chopped pistachios and slices of fresh strawberry for an added visual appeal. Serve the fresh fruit cream chilled to enjoy its refreshing taste fully.
