Ingredients quantity
Brinjal 4 no
Water as required
Salt to taste
Turmeric powder 1 tsp
Oil 2 tbsp
Cumin seeds 1 tsp
Onion seeds ½ tsp
Onion chopped 3 no
Ginger garlic paste 1 tbsp
Salt to taste
Tomato chopped 3 no
Coriander powder 1 ½ tbsp
Red chilli powder 1 tbsp
Turmeric powder ½ tsp
Garam masala 1 tsp
Dry mango powder 1 tsp
Kasuri methi ½ tsp
Green chilli chopped 3 no
Baby potato peeled 1 cup
Water 1 cup
Fresh Coriander chopped 1 tbsp
Coriander chopped for garnish

Method
1.Take a brinjal and cut off the upper part of its peel. Then cut 1/2 part and
make an incision in the middle part of the brinjal.
2.Add water, salt and turmeric powder in a bowl, mix well and leave the
brinjal in turmeric water.
3.Place a pressure cooker in a medium flame and heat the oil.
4.Now add cumin seeds and onion seeds sauté for a minute.
5.Add chopped onion and sauté for 5 minutes until it turns golden brown.
6.Add ginger garlic paste and salt sauté for a minute.
7.Now add chopped tomato and sauté for 4 minute.
8.Add coriander powder, red chilli powder, turmeric powder, garam masala,
dry mango powder, kasuri methi and chopped green chilli mix well and
sauté for 2 minutes.
9.Now add peeled baby potatoes, brinjal and water mix well.
10.Close the lid of the pressure cooker and for about 5-7 minutes or for 4
whistles.
11.Let the pressure release naturally before opening the lid.
12.To thicken it, open the lid and cook on low flame for a 3 minute more.
13.Now add chopped fresh coriander and mix well.
14.Side out in serving bowl and garnish with chopped coriander.
