Kale Salad with Chicken, Cucumber, Bell Pepper and Red Onion

Ingredients:
• Boneless, skinless chicken thighs, sliced into strips
• Olive oil
• Seasonings (salt, black pepper, garlic powder, onion powder, paprika)
• Kale, stems removed and leaves chopped
• Cucumber, cut into strips
• Red onion, thinly sliced into strips
• Yellow bell pepper, cut into strips
• Micro broccoli

For the dressing:
• Olive oil
• Lemon juice
• Dijon mustard
• Chili Garlic hot sauce
• Salt
• Lemon pepper

Instructions:
• Heat olive oil in a skillet over medium heat. Add the chicken strips and season with salt, black pepper, garlic powder, onion powder, and paprika. Cook until they are browned and cooked through. Remove from heat and set aside.
• In a plate, combine the chopped kale, cooked chicken strips, micro broccoli, and cucumber, red onion, and yellow bell pepper strips.
• In a small bowl, whisk together the ingredients for the dressing: olive oil, lemon juice, Dijon mustard, chili garlic hot sauce, salt, and lemon pepper.
• Pour the dressing over the kale salad and toss until the salad is evenly coated.
• Serve and enjoy!
