Recipe :
Chana Dal Paratha
Preparation Time: 30 minutes
Cooking Time: 40 minutes
Serves: 3-4

Ingredients:
2 cups Chana Dal (soak overnight)
4-5 whole Red Chilies
¼ tsp Hing
8-10 cloves Garlic
2 tsp Cumin Seeds
2 tbsp chopped Coriander
1 tbsp chopped green chilies
3 cups flour
2 tbsp oil + Oil for greasing
Salt to taste

Method:
Soak the Chana dal over nightt or for at least 6 hours. Drain the water.
In a large bowl, take the flour, add ½ tsp salt, 1 tbsp oil and sufficient water to knead to a soft, smooth dough.
Rest the dough for at least 20 minutes.
Meanwhile, heat 2 tbsp oil in a pressure cooker.
Add the cumin seeds, asafetida and allow to splutter. Add the chopped garlic and broken red chilies and sauté till the garlic is fragrant.
Add the drained chana dal, ¼ cup water and salt. Pressure cook for 3 whistles asnd allow the pressure cooker to cool down.
Remove the dal and grind to a coarse powder without adding any water. Adjust seasoning, add chopped green chilies, coriander, more red chili powder if required, to prepare the stuffing.
Knead the dough again for 2 minutes and break into tennis ball sized balls.
Flatten the balls to make a cup. Place 2-3 tbsp of the stuffing in the center. Bring together the edged and pinch together to form a ball. Flatten the ball, dust in flour and roll out to a disc of about 7-8”.
Cook the stuffed paratha on a medium hot tawa till golden dots appear on one side. Flip and cook the other side as well. Add 1 tbsp oil on the paratha and press and cook the paratha till crisp on both sides. Serve hot.
