Recipe

Ingredients
– Black grapes / Kale angoor – 1 Cup + 4 to 5 Chopped + 1 For garnishing
– Black salt / Kala namak – As per taste
– Chaat masala – 1/2 tsp
– Lemon juice / Nimbu ka ras – Of 1/2 lemon
– Sabja seeds – 1 tbsp
– Water – 4 tbsp
– Ice cubes – As required
– Soda Water / Soft Drink – As required
– Mint leaves / Pudina – For garnishing
– tsp = teaspoon
– tbsp = tablespoon

Instructions
– Soak the sabja seeds in water for 10 to 15 minutes. Keep it aside.
– Take black grapes in a grinding jar. Add black salt, chaat masala, and lemon juice. Grind it for a few seconds to prepare juice from it. Then strain it. Keep it aside.
– Now take a serving glass. Add ice cubes, soaked sabja seeds, and chopped grapes pieces.
– Then fill a 3/4 serving glass with the prepared black grapes juice.
– Now pour the soft drink into a serving glass. Garnish the serving glass with grape and mint leaves.
– ‘Black Grapes Mojito’ is ready to be served.

Oil for shallow frying (তেল, ভাজার জন্য) (तलने के लिए तेल)
Unsalted butter, 2 tbsp (লবণবিহীন বাটার, ২ টেবিল চামচ) (बिना नमक का मक्खन, 2 बड़े चम्मच)
Chopped garlic, 1½ tbsp (কুচানো রসুন, ১½ টেবিল চামচ) (कटा हुआ लहसुन, 1½ बड़े चम्मच)
1 green chili, finely chopped (কাঁচা মরিচ, ১টি কুচানো) (हरी मिर्च, 1, बारीक कटी हुई)
Water, 1 cup (পানি, ১ কাপ) (पानी, 1 कप)
Optional: chicken powder (chicken stock or bouillon), 1 tsp (ঐচ্ছিক: চিকেন পাউডার, ১ চা চামচ) (वैकल्पिक: चिकन पाउडर, 1 चम्मच)
Coriander, 3-4 tbsp, finely chopped (ধনেপাতা, ৩-৪ টেবিল চামচ, সূক্ষ্মভাবে কুচানো) (धनिया, 3-4 बड़े चम्मच, बारीक कटा हुआ)

Juice of 1 whole lime (১টি পুরো লেবুর রস) (1 पूरे नींबू का रस)
Green onions, thinly sliced, for garnish (সবুজ পেঁয়াজ, পাতলা করে কাটা, সাজানোর জন্য) (हरी प्याज, पतले स्लाइस में कटी हुई, गार्निश के लिए)

Instructions:

Prepare Chicken:
In a bowl, combine the chicken slices with salt, pepper, garlic paste, and egg white. Mix well.
Add cornflour or cornstarch, ensuring there are no lumps. Set aside.
Frying Chicken:
Heat enough oil in a pan to shallow fry the chicken pieces in batches.
Fry each side for 3 minutes or until golden. Use a lid to cover if the oil splatters.
Transfer fried chicken to a plate lined with paper towels to remove excess oil.
Making the Sauce:
Discard all but 1 tsp of the frying oil from the pan.
Add butter and let it melt. Then, add chopped garlic and sauté for 30 seconds, ensuring it doesn’t brown—just until it’s soft.
Add the chopped green chili and stir.
Pour in 1 cup of water and bring to a boil. Add chicken powder if using, salt, pepper, and sugar to taste.
Thicken the Sauce:
Add the cornstarch slurry to the boiling sauce, stirring continuously until the sauce thickens.
Combine and Garnish:
Add the fried chicken back into the pan, mixing well to coat with the gravy.
Turn off the heat.

Homemade greek yogurt

Why buy greek yogurt in the store when the homemade greek yogurt is much tastier and did I mention it’s also a lot cheaper than store-bought. All it takes is 2 ingredients and a bit of time and you can be making your own greek yogurt at home !!

The Best Homemade Greek Yogurt
Ingredients
1 liter or 4 cups Milk
75g or 1/4 cup Yogurt plain with active cultures

Directions:
All right food Dees

First, we are going to start by adding 1 liter or 4 cups of 3 % milk to a pot. you can use skim milk if you like to make it lower calorie. a place to pot on medium-high heat and we are going to bring this to 180F or 80 C. Make sure you stir to keep a skin from forming or burning the bottom of the pot. A thermometer is going to be important in this recipe I have linked you in the description if you need one.

Once you have reached 180f, let’s go ahead and remove this from the heat.

we are going to let this cool until it reaches 115f or 46c
you can speed this up by placing the bowl on an ice bath and stir it until it reaches 115f

Once we have reached 115f we are going to take a bit of the milk and mix it with 1/4 cup or 75 grams of plain yogurt with live cultures this is important as we need those cultures to make the yogurt. mix it well until the yogurt is combined with the milk. then we are going to add the mixture back to the milk and mix it in.

let’s cover the bowl with cling film and place it on a baking sheet.

Then grab the warmest towel you have and let’s wrap our yogurt baby in it to keep it warm. we are trying to keep the temp at 115 f. We are going to take our yogurt baby and place it in the oven with the light on for 6-12 hours. the longer you leave it the thicker it will be.

pro tip if you have a good thermometer turn your oven on for a min or so just to get the temp of the oven to 115f. but be careful to high and it will stop the cultures from making the yogurt.

After you left it for 6-12 hours you will have regular yogurt. this is good as it but we are going to kick it up a notch and make thick Greek yogurt.

place a strainer over a bowl and add cheesecloth. or a towel you can even use a coffee filter here. Pour your yogurt into the strainer and over and place it into the fridge for a few hours or overnight. The longer you leave it the thicker it will be. and with the power of youtube magic here is your homemade greek yogurt. Now I left mine a little too long and it’s thick as cream cheese! so I am going to add some of the weigh back and mix it up to get the thickness I like.

let put this in a bowl and top with some fresh strawberries, granola, and some honey.

To Make Roasted Eggs

Egg – 10 Nos
Oil – 1 Tsp
Turmeric Powder – 1/2 Tsp
Red Chilli Powder – 1 Tsp
Black Pepper Powder – 1 Tsp
Salt – 1 Tsp

To Make Egg Curry

Oil – 3 Tbsp
Mustard Seeds – 1/2 Tsp
Cumin Seeds – 1 Tsp
Onion – 3 Nos
Green Chilli – 4 Nos
Ginger Garlic Paste – 2 Tsp
Tomato Puree ( 3 Tomatoes )
Red Chilli Powder – 1 Tsp
Coriander Powder – 1 1/2 Tsp
Salt – 1 Tsp
Pepper Powder – 2 Tsp
Roasted Eggs
Curry Leaves
Coriander Leaves

METHOD:

1. Boil the eggs, remove the shells, cut them into halves and keep them aside.
2. Take a wide, flat pan and add oil. Add turmeric powder, red chilli powder, black pepper powder and salt.
3. Mix well and saute the powder for 10 seconds. Then place the egg halves and roast them for 2-3 minutes each side on a low flame.
4. Remove the roasted eggs from the pan and keep aside.
5. Take oil in a wide kadai and heat it. Add mustard seeds and cumin seeds. Saute.
6. Once the mustard seeds start splattering, add onions and saute until they are golden brown in color.
7. Add green chillies, ginger garlic paste and saute until the raw smell is fully gone.
8. Add the tomato puree and mix. Saute until the moisture is fully gone and the gravy is thickened.
9. Add red chilli powder, coriander powder, black pepper powder and salt. Mix well.
10. Add water, mix well and cook the gravy for 5 minutes.
11. Gently drop the roasted eggs in theh gravy and cook them in the gravy for 5 minutes.
12. Lastly add fresh curry leaves and coriander leaves. Turn off the stove.
13. Yummy, tangy and spicy egg curry is ready to be served hot and nice with rice/roti.
