Ingredients:
1 kg raw mango pieces
1 tbsp turmeric powder
2 tbsp Kashmiri chili powder
3 tbsp salt
1 cup mustard oil
1/4 cup white vinegar
2 tbsp fennel seeds
2 tbsp mustard seeds
2 tbsp fenugreek seeds
2 tsp nigella seeds
Method:
Wash, wipe and cut mangoes into small pieces. Mix in 2 tbsp salt and set aside for 5 minutes to sweat. Meanwhile, lightly roast the fenugreek, mustard and fennel seeds and grind coarsely.
Heat the mustard oil or another oil to smoke point.
Remove from heat and cool.
Drain the moisture from the mango pieces and mix in all the other ingredients. Mix well and store in clean strong glass jar.
