To Marinate mutton——
Mutton: 1Kg
Salt: 2 tsp
Ginger Garlic Green chillies paste: 4-5 Tbsp
Red chilli powder: 2 tsp
Coriander powder: 2tsp
Roasted Cumin powder: 2tsp
Turmeric Powder: 1tsp
Garam Masala Powder: 1tsp
Dahi: 250gms or 1cup
Lemon Juice: 1no.
Fresh Coriander: 2Tbsp Fine chopped

For Biryani Rice——-
Rice : 1 Kg washed and soaked for 30mins
Water To boil Rice
Salt: 2 Tbsp
Shah Jeera: 1 tsp
Fresh Coriander: 1 tsp Finely Chopped
Tej patta: 1
Green Chilli: 2
Lemon Juice: 1/2 lemon

For Mutton Gravy——–
Onion: 8 med (800gms)
Oil: 1 Cup
Tej patta: 2
Cinnamon Stick: 2 x 2″
Green Cardamom: 5-6
Black Cardamon: 2
Star Anise: 2
Black pepper: 6-7
Shah Jeera: 1 tsp
Jeera: 1 tsp
Tomato: 2 med
Mint: 1/2 cup Finely Chopped
Green Chillies: 2-3
Water : 1 Cup to cook Mutton
Biryani Masala: 2 Tbsp

For Biryani Layering——
Biryani Masala: 1 tsp
Fresh Mint: Finely Chopped
Fresh Coriander: Finely Chopped
Food Color: Lemon Yellow (Optional)
Ghee: 2-3 Tbsp
Birista
Lemon: 1/2
Milk: 1 Cup Luke Warm
Saffron stands: 7-8
Water: 1/2 Cup

Black pepper 2 tbs
Dry coriander 4tb
Cumin seeds 3 tbs
Cloves 2tbs (or as per choice)
Javitari I normal size piece
Garlic 8clove
Ginger 2 inch piece
Green chilli 10 (per choice)
Bay leaves 4-5

You can follow the spices if you like a bit spicy and more tasty rice or
Spices can be modified as per choice

(But the culinary taste of this special pulao need this much spices )

Matra chaat

MATRA CHAAT

Ingredients

250 grams dried white peas, soaked for 6-8 hours
Salt to taste
A pinch of turmeric powder
A pinch of soda bi carbonate
1 medium onion, chopped
2 green chillies, chopped + to sprinkle
2-3 tbsps chopped fresh coriander leaves + to sprinkle
2-3 tbsps date and tamarind chutney
2-3 tbsps green chutney
1 tsp roasted cumin powder
1 tsp chaat masala
Black salt to taste
Salt to taste
A pinch of yellow chilli powder
1 tbsp lemon juice
Fried masala chillies for garnish
Butter as required
4 kulchas for serving

Method

1. Take a pressure cooker. Drain the white peas and add to the cooker. Add 2 cups water, salt, turmeric powder and soda bi carbonate and mix well. Cover and cook on medium heat till 4 whistles are released.
2. Open the lid once the pressure settles completely.
3. Transfer in a bowl. Add onion, green chillies, coriander, date and tamarind chutney, green chutney, roasted cumin powder, chaat masala, black salt, salt and yellow chilli powder and lemon juice and mix well.
4. Heat butter on a nonstick tawa. Place kulchas and toast till crisp.
5. Transfer matra chaat in serving bowls, sprinkle some green chillies and coriander on top. Garnish with fried masala chillies and serve with toasted kulchas.
