Khandeshi khichdi recipe

आप को पता ही होगा की मुझे खिचड़ी सबसे ज्यादा पसंद है, अबतक मैंने चैनल पे बहोत सारी खिचड़ी रेसिपी शेर की है. अब एकबार आप ये खानदेशी खिचड़ी बनाये बहोत ही ज्यादा टेस्टी बनतीहै।

Ingredients –

2 tbsp Oil
½ tsp Mustard Seeds/Rai
½ tsp Cumin Seeds/Jeera
2 tbsp Peanuts
2 Dry Red Chilli
8-10 Curry Leaves
5-6 Fresh Crushed Garlic Cloves
1 Onion
1 Diced Potato
1 tsp Kashmiri Red Chilli Powder
1 tbsp Onion Garlic Powder
1 tsp Coriander Cumin Powder
½ tsp Turmeric Powder
1 Chopped Tomato
1 Cup Soaked Basmati Rice
½ Cup Soaked Toor Dal/Arhar Ki Dal
3 Cup Water
As per taste Salt
2 tbsp Chopped Coriander Leaves (For Garnishing)

Serve it with Kadhi, Roasted Papad, Onion Salad

Fresh Fruit Cream

Ingredients

For rabdi:
Milk 2 cups

Fruits:
Apple 2 pcs
Papaya 1 small pc
Grapes ½ cup
Pomegranate seeds ¼ cup
Banana 2 pcs
Mango 2 pcs
Strawberry 9-10 pcs

For cream:
Fresh cream 1 cup
Hung curd 1 tbsp
Powdered sugar 1 tbsp
Milkmaid 2 tbsp
Rabdi 4 tbsp
Green cardamom powder ½ tsp
Strawberry syrup

Pista chopped for garnish
Silver vark for garnish

Method:

Rabdi Preparation:
Rabdi serves as a rich and creamy base for our fruit cream, adding depth and richness to the dessert.

1. Heat and Boil Milk: Begin by heating a pan over medium heat. Pour milk into the pan and allow it to come to a boil.
2. Simmer and Stir: Once the milk reaches a boiling stage, reduce the flame to medium-low. Continuously stir the milk to prevent it from sticking to the bottom of the pan.
3. Thicken the Milk: Let the milk simmer gently until it thickens to a desired consistency. This process may take some time, so patience is key. Keep stirring to ensure even thickening and to prevent burning.
4. Cool and Chill: Once the rabdi reaches the desired thickness, remove it from the heat and let it cool down. Transfer it to a bowl and refrigerate until chilled.

Cutting of Fruits:
The vibrant assortment of fruits adds freshness and flavour to our fruit cream.

1. Wash and Prepare: Begin by thoroughly washing and cleaning all the fruits. This ensures they are free from any dirt or impurities.
2. Cut into Bite-sized Pieces: Peel the apple, papaya, banana, and mango, then cut them into small, bite-sized pieces. Transfer these pieces into a large mixing bowl.
3. Prepare Grapes and Strawberries: Cut grapes and strawberries into halves or quarters, depending on their size. Add them to the bowl of mixed fruits.
4. Add Pomegranate Seeds: Incorporate pomegranate seeds into the fruit mixture, gently mixing them in.
5. Refrigerate: Place the bowl of mixed fruits into the refrigerator to keep them fresh until ready to assemble.

Cream Preparation:
The creamy layer brings everything together, adding indulgence to our dessert.

1. Whip Fresh Cream: In a separate bowl, whip chilled fresh cream until it forms stiff peaks.
2. Incorporate Hung Curd: Add hung curd to the whipped cream and continue whipping until well combined.
3. Sweeten and Flavor: Gradually add powdered sugar and milkmaid (condensed milk) while continuing to whip. Finally, fold in the chilled rabdi and green cardamom powder until everything is evenly mixed.

Assembling Fresh Fruit Cream:
Bringing together the prepared elements to create a visually appealing and delicious dessert.

1. Layering in a Glass: Take a serving glass and start by adding a layer of strawberry syrup at the bottom.
2. Add Fruits: Spoon a generous amount of the mixed fruits over the syrup, ensuring an even distribution.
3. Top with Syrup and Cream: Drizzle another layer of strawberry syrup over the fruits, then add a dollop of the prepared cream on top.
4. Repeat Layers: Repeat the layering process by adding more fruits followed by syrup and cream until the glass is filled to your liking.
5. Garnish and Serve: Finish off by garnishing the top with chopped pistachios and slices of fresh strawberry for an added visual appeal. Serve the fresh fruit cream chilled to enjoy its refreshing taste fully.

Rava dosa recipe

Ingredients

1 cup Rava / Sooji / Semolina
1 cup Rice Flour
1/2 cup Maida / All Purpose Flour
Salt
Water
1 cup Oil
1 tsp Cumin Seeds
2 tsp Whole Pepper
3 Green Chilli chopped finely
Curry leaves
1tbsp Ginger
1 Onion
Coriander Leaves / Cilantro
Coconut pieces

1. Take a bowl add maida, rice flour, rava, salt, jeera, green chillies, onions, curry leaves, cilantro, ginger, and mix well.
2. Now add water and make into a very thin batter and set aside with lid for 45minutes to hour. Adding coconut and pepper is optional but it definitely enhances the taste.
3. Heat a non stick tawa and brush with little oil and pour couple of ladleful of batter from a height so that it forms small holes in this. Don’t Spread the batter..Just pour it thinly here and there.
4. Drizzle some oil and let it cook for couple of minutes or till it turn golden. Flip over and cook for a min.Remove and serve.
5. Serve with coconut chutney and enjoy hot Rava Dosa !!!

Aam panna recipe

Full written recipe for Aam Panna

Prep time: 10 mins
Cooking time: 25-30 mins
Serves: 20 glasses

Ingredients:
RAW MANGO | कच्ची कैरी 1 KG
WATER | पानी AS REQUIRED
SALT | नमक A PINCH
GREEN CHILLI | हरी मिर्च 1 NO.
GINGER | अदरक ½ INCH
SALT | नमक ½ TSP
BLACK SALT | काला नमक 1 TBSP
CUMIN POWDER | जीरा पाउडर 1 TBSP
BLACK PEPPER POWDER | काली मिर्च पाउडर 1 TSP
FENNEL SEEDS POWDER | सौंफ का पाउडर 1 TBSP
SUGAR | शक्कर 500 GRAMS
WATER | पानी AS REQUIRED (COVER THE SUGAR)
LELON JUICE | नींबू का रस OF 1 LEMON
ASSEMBLY
LEMON JUICE | नींबू का रस
SALT & KASHMIRI RED CHILLI POWDER | नमक और कश्मीरी लाल मिर्च पाउडर
AAM PANNA CONCENTRATE | आम पन्ना कंसंट्रेट
ICE CUBES | बर्फ
MINT LEAVES | पुदीना
WATER | पानी
Method:
Wash all the raw mangoes & wipe them clean, then cut their tops off & add in them into a pressure cooker.
Further add water until halfway, you don’t have to cover the mangoes with water, along with salt, then close the lid & pressure cook the mangoes for 5-6 whistles over medium high flame.
Once cooked, switch off the flame & let the cooker de-pressurize naturally, then remove the mangoes & cool them down & peel them.
Once peeled scrape the pulp from the peels & then use a knife to cut & scrape off the remaining pulp from the seed, collect all the pulp in a bowl.
Transfer all the pulp in a mixer grinder jar along with green chilli, ginger, salt & all the remaining powdered spices & grind into a fine paste.
Add the sugar into a pan along with just enough water to barely cover the surface of the sugar, then switch on the flame & cook until the sugar dissolves, then add the lemon juice & also add the paste by straining it through a sieve.
Stir well & cook for 4-5 minutes over medium flame until it thickens slightly.
Once cooked switch off the flame & cool it down completely, your aam Panna concentrate is ready, store it in a sterilized bottle.
To make Aam Panna, rim the glass with lemon juice & kashmiri red chilli powder & salt mix, then add the concentrate (as per your taste preference) into a glass along with ice cubes, crushed mint leaves & water, stir well, your deliciously refreshing aam Panna is ready.
